Great Baba's Flapper Pie


Crust

Ingredients

7 Double graham crackers, rolled fine
1/2 cup sugar
1/4 cup melted margarine
1/2 tsp cinnamon



Directions

  1. Mix all ingredients together and press evenly into pie plate
  2. Reserve 1/4 for crumbs on topping
  3. Bake at 350F for 10 minutes

Filling

Ingredients

2 cups milk
2 egg yolks (keep whites for topping)
2 TBSP corn starch
1/4 cup white sugar
1 tsp vanilla

Directions

  1. Combine all ingredients in a pot and cook over medium/low heat until thick.
  2. Spread thickened custard onto crust while hot

Topping

Ingredients

2 egg whites
3 TBSP icing sugar

Directions

  1. Beat egg whites until stiff
  2. Beat in icing sugar
  3. Spread onto pie, sprinkle with set aside crumb from crust

Bake pie at 250F for 20 minutes
let cool & chill for 4 hours before serving
