Crust
Ingredients
7 Double graham crackers, rolled fine1/2 cup sugar
1/4 cup melted margarine
1/2 tsp cinnamon
Directions
- Mix all ingredients together and press evenly into pie plate
- Reserve 1/4 for crumbs on topping
- Bake at 350F for 10 minutes
Filling
Ingredients
2 cups milk2 egg yolks (keep whites for topping)
2 TBSP corn starch
1/4 cup white sugar
1 tsp vanilla
Directions
- Combine all ingredients in a pot and cook over medium/low heat until thick.
- Spread thickened custard onto crust while hot
Topping
Ingredients
2 egg whites3 TBSP icing sugar
Directions
- Beat egg whites until stiff
- Beat in icing sugar
- Spread onto pie, sprinkle with set aside crumb from crust
Bake pie at 250F for 20 minutes
let cool & chill for 4 hours before serving
