Ingredients
1 1/4 cups boiling water1 cup oats (quick or uncooked)
1/2 cup butter or margarine, softened
1 cup granulated sugar
1 cup firmly packed brown sugar
1 tsp vanilla
2 eggs
1 1/2 cups sifted flour (all purpose)
1 tsp baking soda
1/2 tsp salt
3/4 tsp cinnamon
1/4 tsp nutmeg
Directions
- pour boiling water over oats, cover and let stand 20 minutes
- beat butter until creamy, gradually add both sugars and beat until fluffy
- blend in eggs and vanilla
- add oat mixture and mix well
- sift together flour, baking soda, salt, cinnamon and nutmeg
- add dry ingredients to wet and mix well
- pour into well greased and floured 9" square pan
- bake at 350F for 50 - 55 minutes
- when done remove cake from oven but do not remove cake from pan
Frosting
Ingredients
1/4 cup melted butter1/2 cup firmly packed brown sugar
3 TBSP half and half or milk
1/3 cup chopped nuts
3/4 cup shredded or flaked coconut
Directions
- Combine all ingredients together and spread evenly over cake.
- Broil until frosting becomes bubbly
