Raisin Bran Muffins

Ingredients

1 cup boiling water
1 cup bran
2 1/2 cups flour
2 TBSP baking soda
1/2 tsp salt
1/2 cup butter
1 1/2 cup sugar
2 eggs
2 cups buttermilk*
2 cups oatmeal
2 cups raisins

Directions

1. Pour boiling water over bran and set aside
2. In large bowl combine flour, baking soda and salt - mix well
3. In medium bowl cream butter and sugar together
4. Add eggs and butter milk to butter mixture - blend well
5. Add liquid mixture to dry ingredients - mix well
6. Add oatmeal, bran and raising - stir to blend
7. Bake at 375F for 15-20 minutes

Notes
* MIX 1 tbsp vinegar with 1 cup milk to create sour milk
Unused batter can be kept sealed in an airtight container in the fridge for up to 2 months
Bake straight from fridge for 20-25 minutes
Add in different spices like cinnamon, pumpkin spice or nutmeg and allspice to change the flavor profile. Use 1/2 TBSP
